I have been unwell for the last few months, hence I was not able to put out new recipes or posts. I suffered from inflammation in rib cartilage which made my movements painful.
After the treatment and much-needed rest, I am now back to blogging and sharing recipes.

Let’s Talk About Saffron:
Saffron is one of the most precious spices in the world of herbs and spices. The spice originates from a flower called crocus sativus—commonly known as the “saffron crocus.”
It is extremely subtle and fragrant. The slightly sweet, luxurious taste is absolutely magical. Just a few strands are enough to make a recipe stand out.
Indian, Persian, Arabic, Greek, and Spanish are some of the few cuisines that use saffron in their recipes.
Why is Saffron so expensive?
Saffron is one of the expensive spices in the world. And there is a reason for that. Each flower produces only three threads (stigmas) of saffron, and it blooms for only one week each year.
Saffron harvest takes place by hand between dawn and mid-morning when the flowers are still closed. It takes about 1000 flowers to get one ounce of saffron.
Tip: To know that you are getting a real deal while purchasing saffron- sniff it. It should have a sweet aroma that is a bit like hay. Also, the strands should be red in color and not yellow.
You can buy saffron at any Middle Eastern or Indian store. It is also available at Whole Foods and Amazon.
How to store Saffron?
Keep threads in a cool, dry, dark place (you can put them in the refrigerator for up to a year). Saffron water can be stored in the fridge in an airtight container for up to three weeks.
What can I add saffron to?
Saffron is used in many savory and sweet dishes. The aroma and the flavor of saffron instantly take the recipe to the next level. These days it is also used in drinks.

Three Must-try Desserts With Saffron:
Lemon Saffron Cheesecake Cups:
This is my egg-less version of cheesecake. Flavored with lemon and saffron, these Lemon Saffron Cheesecake cups make a light and creamy dessert.
Did I mention these are No-Bake? I made these with my then three-year-old and it turned out to be a fun mother-daughter activity.

Baked Peach With Saffron:
Making this recipe is simple. I started with washing the peach and cut it in half. I removed the stone and prick the fruit with a fork.
Next, I mix saffron with water and added it to the peach pieces. Follow it by baking it for 15 minutes at 350 degrees temperature.
Once that’s done, sprinkle the baked peach pieces with saffron sugar and bake it for another 15 minutes.
When that is done, take them out and let them cool down. In the final step, top it with a scoop of vanilla ice cream and the juices of the baked peach pieces and serve.

Pistachio Saffron Smoothie:
For making this delicious smoothie, I have used vanilla yogurt and pistachio gelato for the base. To give it a thick creamy texture.
The main ingredient here is saffron, rose water and cardamom, which gives it’s an amazing aroma to the drink. I have absolutely added no sugar to the drink.
Just run all the ingredients through the blender and you have a delicious dessert drink ready.
